Organic compounds with acidic properties are organic acids. Carboxyl acids are the most common type of organic acids used commercially, carboxyl acids comprise a carboxyl group with a long carbon chain. Some of the other feedstock used in the production of organic acids includes amino acids, oil, sulfuric acid, enzymes, proteins, salts of acids, etc. Most of the food products are infused with preservatives, in order to increase their shelf life. Organic acids are extensively used for regulating the acidic content of foods, and enhance the food flavor. Most manufacturers prefer using natural preservative, as the consumers have evolved from low to high involvement buyers.
